Vegan Bread Pudding
Description
Bread Pudding just like your mother used to make, providing of course your mom was vegan. This is comfort food at its very best.
Ingredients
- 2–1/4 cups soymilk
- 1/2 cup brown sugar
- 2 tbsp maple syrup
- 1 tsp vanilla
- 1/4 cup raisins
- Ground cinnamon
Instructions
- Preheat oven to 350°F
- 8-inch square glass baking dish, greased 5 cups bread cubes (a good crusty rustic or French bread is great)
- In a large bowl, whisk together soymilk, sugar, maple syrup and vanilla. Add the bread cubes, let sit about 10 minutes, or until bread is soft and has absorbed most of the milk. Add the raisins and a few sprinkles of cinnamon and gently mix together. Don’t over mix it. Scoop mixture into prepared pan. Lightly sprinkle top with a little more cinnamon.
- Bake pudding in preheated oven for 30 to 45 minutes, or until puffed and golden and milk has been absorbed.

I was just surfing the net for vegan bread pudding recipes when I came across your show and I wished I had not bought that bottle of cow’s milk! I didn’t think bread puddings with soy milk were possible, but thanks to your recipe, I do now! Thank you too for making it egg-free! I’m a vegetarian dabbling in veganism and I want to draw my daughter and husband into veganism as well, and your began bread pudding is a great start! Thank you!

Hi here! I realize this is a old recipe so I hope you have a chance to see this question!
The bread cubes, do you bake them first to make them harder like you would a stuffing? Or just cut the bread in cubes and add the other ingredients? I wasn’t super sure on this when I read the instructions 🙂

What should be the dimensions of the dish used? And I’m assuming that the dish is greased–not the bread cubes? And should the bread cubes be stale or fresh?
