Now that the warmer weather is upon us and we can start to gather again with vaccinated friends and family, I think it’s officially shave ice/snow cone season! It’s the perfect party dessert where the guests can all create their own.
Seriously, what could be more fun than an iced frozen dessert full of creamy, tropical flavors? This recipe is so easy and totally customizable (like most of my recipes). I highly recommend the strawberry puree and coconut lime sauces, and from there you can have diced fruit (strawberries, pineapple, mango, or lychees, sweetened condensed coconut milk, whipped coconut cream, flavored syrups, and even ice cream or sorbet. You can even add a few splashes of rum (for the over 21 crowd). It’s a party!
I also can’t forget the main attraction, which is the shaved ice! I have tried many different ice shavers over the years, from ones where you freeze water into little containers and grind by hand, to electric ones that putter out after making two. My absolute favorite new appliance for making these is the Little Snowie Max! Snowie modeled this machine after their industrial commercial shavers but designed them for home use (using ice cubes). This ice shaver is so impressive, and strong enough to make snow cones or shaved ice for the whole neighborhood. I like to think of it as the Vitamix of ice shavers!
Alternately, you can crush ice in your blender to use in these recipes. I was wondering if it might work with pellet ice too, but honestly it’s absolutely amazing made with shaved ice. I know that Costco sometimes carries them (my daughter ordered one from there after trying ours), as well as Amazon and on the Snowie website too.
I’d love to hear if you give these a try!
xoxo Julie
PrintShave Ice With Strawberry, Pineapple, and Coconut Lime Sauce
Description
This dessert will instantly put a smile on your face!
Ingredients
Coconut lime sauce
1 cup full fat coconut milk
1/4 cup sugar
Zest of 1 lime
Strawberry Sauce
2 rounded cups frozen strawberries, thawed
3–4 tablespoons sugar or sweetener of choice
Shaved ice
Diced pineapple, optional
Sweetened condensed coconut milk, optional
Vanilla or coconut ice cream, optional
Whipped coconut topping, optional
Vanilla syrup, optional
Instructions
Make the coconut sauce: In a saucepan mix together the coconut milk and sugar. Heat until little bubbles start to appear. You just want it hot enough to melt the coconut milk and sugar. You don’t need to simmer it. Add the lime zest and remove from heat to cool to room temperature.
To make the strawberry sauce: In a blender jar or a tall canning jar with a stick blender, combine the strawberries and sugar. Blend until smooth, and set aside.
To make the shave ice: Add shaved ice to a cup, glass, or bowl. Drizzle the coconut sauce and strawberry sauce over top. Sprinkle with diced pineapple, and top with ice cream or a drizzle of sweetened condensed coconut milk. If desired, you can also top with whipped coconut cream. Eat right away.
Notes
You can double the recipes for the coconut sauce and strawberry puree. They can also be made ahead of time and refrigerated until ready to use.
