This recipe is 1 of 172 you can find in the cookbook “The 30Minute Vegan. Kitchari is considered one of the most healing meals according to the ancient Indian science of ayurveda. It translates as “mixture” and usually refers to a mixture of two grains.
Ingredients
- 1 cup uncooked quinoa
- 1 cup dried lentils, rinsed and drained
- 5 cups water or stock
- 1 small yellow onion, chopped
- 8 whole cloves garlic
- 1/4 cup minced fresh herbes such as cilantro, Italian parsley & dill
- Soy sauce
- Sea salt and black pepper
Instructions
- Place all ingredients except herbs, soy sauce, salt, and pepper in a medium size pot over medium-high heat.
- Cook until all the liquid is absorbed, about 25 minutes, stirring occasionally. The consistency should be just slightly liquidy. Add more water if necessary as cooking. Add herbs, soy sauce, salt and pepper to taste.

This recipe is a staple for me. I absolutely love it. Leftovers make great filling for wraps and such. However, please use red lentils! The green ones make for a very unappetizing color in the finished dish.

You are pronouncing the word Kitchari wrong. You are saying “Keechaaree” The correct sound is Kicharee. Short” I” sound and short “a” sound as in “u”

This is a nice recipe, and alrhough kitchai can vary widely, There are some missed essentials here. The focus is on spices that have a specific benefit for digestion and constitution such as cumin, mustard seeds, turmeric, fennel, ginger, clove, cinnamon, hung (instead of garlic) and other possibilities. For the fresh herbs, it’s usually cilantro or parsley, but most fresh herbs are very beneficial. Eight cloves of garlic?!? Maybe if someone has a cold to kick! But it’s not the mainstay. And soy sauce?! I guess. But you just left India:). Water/grain ratio is pretty good. Could even be six cups. Feels like some serious “winging” going on here, and not enough research. Sorry.
