If you love peaches as much as I do, you will want to run into the kitchen and bake this cake now! It’s super easy to do. All you need are a couple of ripe peaches (and a bag of our white cake mix), and you’re good to go!
Peach Coffee Cake
1 package of Julie’s Original White Cake Mix
1 1/2 cups of soy or other non-dairy milk
1/3 cup canola oil
2 teaspoons pure vanilla extract
2 large peaches, pitted, peeled (if desired) and thinly sliced
Topping:
3/4 cup packed light or medium brown sugar
2 teaspoons ground cinnamon
Pour half of the batter into a greased 9 x 11-inch glass baking dish. Spread half of the peach slices evenly over the top. Sprinkle with half of the brown sugar mixture. Drizzle the rest of the cake batter on top. Spread the remaining peach slices evenly over the batter. Top with the remaining brown sugar mixture. Bake the cake according to the directions on the package, about 60 to 70 minutes, or until a tester inserted into the cake comes out clean.
Sometimes I find that I need to bake the coffee cake for an additional 5 minutes or so. That’s it folks! Let the cake cool and enjoy!
