I have been obsessed with jalapenos lately. I’m not sure what it is, but I have been adding them to everything. Thinly sliced on a toasted bagel with juicy tomatoes, avocado and thinly sliced red onion, thrown into hummus (scallion and jalapeno), added to salads, tossed with baby grape tomatoes and a small splash of vinegar. The list goes on and on.
Normally, I buy jalapenos, and although I love them, I forget about them until I find them all mushed in the bottom of the vegetable drawer. But not lately. I bought a bag of jalapenos, and have been enjoying my food so much more with a sprinkle of these bad boys. Maybe it’s the added crunch, maybe the small hit of spice. Maybe they add a little umami to dishes. Who knows.I just know that I love, love, love them!
Tomorrow night I’m grilling pizzas, and guess what I’m topping mine with? You’ve got it! Thinly sliced jalapenos, homemade sliced sausage, tomatoes and a little Daiya cheese. My mouth is watering! Yum!
I’ve actually read that jalapenos are supposed to speed up your metabolism, so maybe that’s it…

When I buy peppers, I cut off the tops and then put them in the freezer. I let them thaw a bit before using so I’m not trying to cut an ice cube. Works really well for me.

I just found some jalapenos at the Farmers Market here, which I was told is pretty rare for Vienna. I have to find something special to do with them!

It must be in the air because I have been doing the same thing. Made hash browns on Monday, guess what I put in them… yep jalapenos. last night mashed potatoes with jalapenos. How can I use them tonight? Our garden runneth over with them. :o)
