Do you ever have that moment of panic late in the afternoon, wondering what you are going to make for dinner? I do, and it happens all of the time! Well lucky for me it’s Instant Pot to the rescue.
I have been cooking with pressure cookers for years. My oldest is around 21 years old and is a Kuhn Rikon. It’s awesome and huge (because I ordered the hotel size since I was catering back then), and I used it all the time. Since then I have added a few more to my collection (no judgement please!), but always the stove top models. That is until now. In fact, I use my stove top cookers much less now since this pot is so much easier. You don’t have to watch it, to make sure that the pressure isn’t getting to high, and constantly adjusting the flame. This is seriously a set it and forget it appliance (thank you Ron Popeil for coining that phrase). It also makes yogurt, steams, slow cooks, makes rice and grains, has a sauté function and more!

I saw the AM northwest show and you made the apple crisp. I just bought my first pressure cooker, Instant pot 6 quart today, waiting for it to arrive. The apple cider you used, is there a brand you liked? Also where did you buy the 6 inch pan at? Would a Corning Ware dish be ok to use? Thanks!

The apple cider I used is from Trader Joe’s. The pan I used is a 6-inch pan I bought at Rose’s restaurant supply in Portland. They probably have a similar one at Sur La Table or Kitchen Kaboodle or on Amazon. I think a Corningware dish should work too. It just needs to fit inside the Instant Pot with a tiny bit of room around it. Also make sure to put it on the rack with 1 1/2 cups boiling water underneath.
