I don’t know about you, but this year I’m going to relax on the 4th of July. I’ll probably work earlier in the day (since my book deadline is looming near), and then just chill with the husband. Our kids are traveling abroad, and so we only have to worry about ourselves. Wow, what a concept, right? Since we have to cook like crazy every other day of the year, I’m thinking that we’ll go for something easy and flavorful. Probably light too. It will most likely involve homemade strawberry lemonade (which may or may not be spiked with a little vodka), and one of my favorite dishes, my Peanut Sesame Noodles from Everyday Dish. The only change that I make now, is to use rice noodles (the kind from the Asian grocery that you use for Pad Thai) and tamari to make it gluten-free. I should also tell you that if you make this dish, be prepared for compliments. It’s just that good!

Strawberry lemonade and peanut noodles sound like perfect food for the fourth. I plan on relaxing, too, because it’s my only day off this week. I’m making really simple veggie burgers on Happy Camper buns.

I think I’ll go make some lemonade and do a little weeding before lounging on the deck a bit. We found some things in our freezer (like frozen yuba sheets) clean-out that should make for an interesting dinner.
