First things first, I will pick a winner for the Ruby’s Rockets on Wednesday (6/26/13). If you haven’t yet, leave a comment on that post. Who wouldn’t want to win 12 boxes of organic fruit and veggie pops just in time for summer?
Next up, I’ve got some fun new things in the works. We’re very close to launching our new line of gluten-free baking mixes! This is so exciting, and has been a long time in the works. Hopefully in the next 4 weeks we’ll be be ready to launch the first two mixes (white cake and chewy chocolate brownies), as well as a beautiful new website. We’re gearing up to offer the mixes on our website, as well as in stores. We’ve been test marketing the mixes and baked goods, and no one can believe that they are gluten-free (and vegan too). The white cake, is the perfect base for so many different favorites, including the strawberry cake above.
And, last but not least, this blog is getting a makeover! I have been wanting to do it for so long, and finally met the perfect designer that knew exactly what I wanted. She must be part mind-reader. I just have to be patient for the next couple of weeks until it goes live. Isn’t it fun to redecorate? Now if someone would just come and surprise me with a kitchen makeover… Seriously, I am dreaming about a fresh coat of paint, maybe some new cabinets, and replacing those granite tiles with butcher block…
And, while I’m waiting for all of these exciting things to come, I am feverishly trying to finish the casserole cookbook which is due at the end of summer. Sometimes it seems that there’s never enough hours in the day. And every summer I dream about those lazy days of summer, that always seem just beyond reach.
So what kind of summer projects do you have planned? Are you going to be able to squeeze in some summer fruit picking, or jam or pickle making time? I sure hope to!

That’s such great news! All of it haha. Very excited to see the new blog look, and also super excited about the cake mixes! And about the casserole book! My winter projects are making more cheese, experimenting with a few different recipes (trying to perfect croissants!), and getting ready for working in the kitchen! Glad to hear things are coming together: it’s great when the mess of a heap of projects all come together around the same time!

As for berries – it’s so hard to find u-pick berries that are organic (except wild blackberries – their big hard seeds take them out of my top 3, though they’re probably the most beneficial of all, as per Dr. Greger.) Our extended family members LOVE our strawberry and raspberry freezer jam, so we’ll keep an eye out for deals at Costco, etc. Ciao!

Gosh, I think your blog is already quite pretty – I’m looking forward to seeing your new design. All your projects are so exciting. I can’t wait to try out your baking mixes. It would be great to have some reliable and easy xgfx standards on hand for occassions when I want to whip up something and know it will turn out well. also, the casseroles book. I can hardly wait. My world needs more vegan casseroles.
My big summer plan involves buying a yoga studio in about 10 days. It’s taking a lot of energy!! So, I guess my big summer plan is to do that and not lose track of every other thing that I care about!
